Eggplant Chips



One of my favorite dishes is eggplant chips! It's a great side dish for baked chicken and it is so good!
Here's how I make it!

Ingredients
  1. Eggplant
  2. Oil
  3. Salt
  4. Pepper
Directions
  1. Wash and cut eggplant into thin slices
  2. mix enough oil to cover all of the cut eggplant and add salt and pepper as desired and thoroughly cover eggplant with sauce.
  3. Place the eggplant on a foil covered pan and cook in the oven at 350 for 5-10 minutes
