One of my favorite dishes is eggplant chips! It's a great side dish for baked chicken and it is so good!
Here's how I make it!
Ingredients
- Eggplant
- Oil
- Salt
- Pepper
- Wash and cut eggplant into thin slices
- mix enough oil to cover all of the cut eggplant and add salt and pepper as desired and thoroughly cover eggplant with sauce.
- Place the eggplant on a foil covered pan and cook in the oven at 350 for 5-10 minutes
